SQUARE ONE BREWERY & DISTILLERY is the latest addition of sustainable breweries in the St. Louis region. Located in Lafayette Square, it is amongst many GDA restaurants including SqWires, Baileys’ Chocolate Bar, and Clementine’s Ice Cream. They work to be as sustainable as their fellow GDA neighbors and it shows in multiple ways throughout the restaurant.

As you can assume, all of their beverages are made in their brewery and distillery located on-site, which reduces the carbon footprint of shipment and allows for a higher quality of crafted beers and spirits. To help with the quality of the brewing process, Square One had their water tested for heavy metals and chemicals by Metropolitan St. Louis Sewer District (MSD). They have also affixed their system with a water filter to offer a cleaner water source for their brewery and their customers. The work they’ve put into their water makes them more conscious of water waste and helps reduces the amount used in the brewing process.

Square One works to bring sustainable options to their food menu. They have a diverse selection of vegetarian options including beer cheese soup, their Distillery Greens salad, falafel burger, wild mushroom pappardelle and, of course, beer pretzels. With that said, the mushroom pappardelle is made with locally sourced mushrooms and their beer pretzels our sourced from Companion Bakery. In addition, their coffee and teas are from GDA-certified Kaldi’s coffee.
