Robust Bistro & Wine Bar, located on Lockwood Avenue in Webster Groves, MO has long been renowned for its extensive selection of sustainable “Clean Wine” and its thoughtfully crafted menu. Founded in 2007 by Stanley and Arlene Browne, the bistro was established with the vision of creating a welcoming space where patrons could explore and appreciate a diverse range of wines paired with food in a comfortable setting.

Robust has been an unsung champion of the sustainable dining scene since opening. Each wine on the list is made by smaller vineyards that follow certified-sustainable practices like biodynamic or certified Organic farming, using no pesticides or chemical fertilizers and additives, and generally acting as good stewards of the land. Wines are organized using their “Robust Factor” — a simple system designed to guide diners through various wine styles. In addition, carefully-crafted cocktails and local beers are available. Bottled wine and locally cold-pressed juices are offered as well.

Robust features a menu of small plates, charcuterie, and eclectic entrees crafted for pairing. Chef Zach Dale, who has been with the bistro since its opening, emphasizes simple, approachable dishes made from carefully sourced local ingredients. His farming background and concern for animals and the environment shows throughout the seasonal menu. Robust has excellent food sourcing and the all electric kitchen (since 2007!) is very energy efficient.

Over the years Robust has garnered numerous accolades over the decades, including multiple “Favorite Wine Bar” awards and recognition as “Restaurant of the Year” by St. Louis Magazine. These honors reflect its status as a cornerstone of the Webster Groves’ new Green Dining District.
