Mission Taco Joint in the University City Loop is a leader for sustainable Mexican food in Saint Louis. Their masa is made from regional, non-GMO corn, which is ground on volcanic stones and used to make their tortillas in-house. They also offer a vegan soft taco made with plant-based meat from St. Louis-based company, Hungry Planet.
Concerned with energy consumption, Mission Taco uses efficient equipment in their kitchens, including a KE2 Evaporator, Energy Star walk-ins, and plastic flaps for their walk-in cooler: all regulate temperature and ensure a lower carbon footprint. Mission Taco’s Loop location also has a white roof, which helps reduce their cooling costs in the summer months.
Mission Taco takes special care to ensure all Hard-to-Recycle items don’t end up in the garbage: light bulbs, batteries, toner and ink jet cartridges, and other items make it to the proper recycling centers. Their bar and their benches are constructed from materials from a torn-down garage, reusing items that otherwise were destined for the landfill. They also have a robust food waste log which they track through restaurant365 ensuring that they are always monitoring and improving their food waste prevention practices.
Mission Taco made a splash in 2018 by moving to a straws-on-request-only policy, transitioning to compostable straws for when customers ask for them, and only serving water on request! This has dramatically reduced their single-use plastic waste and reduced water waste, since an average of 6 oz. of water is wasted per customer when water is automatically served.
