FARMSTEAD is a foodie oasis in the heart of the Washington University School of Medicine campus catering to the take-out crowd who wants some really healthy alternatives from locally sourced farms. It is managed by Bon Appetit, so you know they are doing their best to find and provide sustainable choices. There are always delicious vegan and vegetarian options and during the growing season most of Farmstead’s produce comes from Double Star Farms, a local farmers’ collective.

Farmstead is a small operation that uses every bit of food possible and composts the rest. Being a part of the Washington University system, they have access to the Office of Sustainability, and all the institutional support and programs for sustainability like nearby bike racks, public transit passes for employees, LED lighting, thermal windows that provide lots of natural lighting and high-efficiency HVAC systems. Bon Appetit promotes their Plant Forward philosophy on their website and with signage in the dining area to emphasize they are adding more plants, not just taking away meat. This positive spin helps lead the region to adopt a more plant-based diet to reduce environmental impacts from Concentrated Animal Feeding Operations (CAFOs) that have high environmental impacts.
