CAFE ST. LOUIS is a restaurant located on the second floor of the Missouri History Museum. Many of their practices are towards a goal to become more sustainable. There are many things, from energy-efficient appliances to environmentally friendly cleaning products, that they have applied to their operations. Café St. Louis was formed with the intent to have the smallest impact on our planet.

Café St. Louis does a great amount of work to reduce food waste. They make sure to measure and weigh out their portions for each item and they keep a food waste log as a way to know when to change their portions sizes. In addition, Café St. Louis composts in the front and back of house which helps to reduce the amount of food taken to landfills thus reducing greenhouse gases emitted from the landfills.

Their efforts to reduce waste is beyond the food. Café St. Louis is affixed with bi-level switching, daylight sensors and shades which are all used to reduce the amount of energy used in lighting. Thanks to their home of the Missouri History Museum, which is improving their efforts to reduce energy consumption everyday as they near requirements for LEED certification.

The menu options are key to their efforts to become more sustainable. They offer vegetarian and vegan options such as their veggie wrap and sandwich, a build-your-own option, and soups. Café St. Louis offers numerous options of healthy, uncooked fruits and vegetable items. In addition, they offer an assortment of locally-sourced drinks including Excel Soda, Fitz’s, Urban Chestnut, and 4 Hands.
