The Danforth University Center (DUC) is managed by Sodexo and located on main campus, serving as a dining hub for the WashU community. The DUC features six kitchens with a variety of cuisines and rotating menus. Despite being a busy location, the DUC maintains the same effective waste management strategies as fellow residential dining halls in the Bear’s Den and the Village House.
The DUC diverts over 99% of organic material from landfills. Plate waste and kitchen scraps are composted and if the kitchen can reuse something, it will. Nothing from the kitchens with a carbon-hydrogen bond sees a compost bin before getting tracked and weighed by the food waste management system, LeanPath. Chefs and managers use this data to plan and prepare more efficiently.
Diners will enjoy a variety of local products, local and regional produce and meat and third-party certified seafood. Dedicated kitchens prepare Kosher and Halal foods with nutritional information available to guests upon request. Meals are served on compostable service ware. WashU Facilities Management helps maintain energy efficient kitchen appliances and building and equipment updates so that the WashU community feels comfortable while they dine.
