Tivanov Catering Co. has been a member of the Green Dining Alliance since 2015. Their gyros – vegetarian and otherwise – have been a staple of the Earth Day Festival for years. Owner Teddy Ivanov is very health-conscious and sustainably-minded. He goes the extra mile to source pasture-raised and grass-fed beef from Missouri’s own Pierce Creek Cattle Company. The tangy tzatziki is made from Teddy’s own brand of Bulgarian yogurt, Yobul. This yogurt, featuring Bulgaria’s own unique strain of probiotic bacteria, is made with high quality dairy from Kilgus Farmstead in Illinois. In addition, Teddy frequents local farmer markets and CSA’s to source his lettuce, tomatoes and herbs whenever possible.
