The downtown location of Rooster makes all of their famous breakfast and lunch fare from scratch, made with local, environmentally responsible ingredients, including pasture-raised, local eggs!
The gorgeous décor is made almost entirely from repurposed and found items, giving new life to old items and reducing the amount of energy, virgin materials, and packaging waste that comes from buying things new.
The straws and to-go boxes at Rooster are all made from compostable material, reducing the amount of single-use plastic waste that ends up in our landfills or as litter.
Food waste is minimized at Rooster by providing nearly all of the basic breakfast items a la cart – you can have one pancake and one egg if that’s all you want, or add food if you’re feeling extra hungry! They have an impressive food tracking system that all of the Bailey’s restaurants use in order to ensure they aren’t over-producing or over-ordering food. This helps to reduce their Greenhouse Gas emissions by helping to keep organic material out of the landfill (food emits methane when it is trapped in a landfill. Methane is a Greenhouse Gas with up to 80 times the warming potential of CO2).
Bailey’s serves pasture-raised chicken, pork, and beef, which ensures the animals are healthy and happy (or, as executive chef AJ Benga likes to say, the animals have all happy days…except for the last one). They have TONS of vegetarian options and the best vegan biscuits and gravy in STL. Their coffee is sourced from Goshen, a local coffee roaster, and Big Heart Tea Co. Drop in for crepes, breakfast spreads, and toasty sandwiches.
