BRASSERIE BY NICHE serves sustainably-focused French cuisine with a local flair in the Central West End.

Brasserie uses Eat Here St. Louis to locally source produce like asparagus, peas, tomatoes, and green beans for their ever-changing menu. Their pastry options feature local fruits like strawberries and blueberries when they are in season. Their eggs and poultry are locally sourced from Double Star Farms. Mushrooms and other specialty items come from Ozark Forest Mushrooms or Earth Angel, and all of their bread comes from Companion Bakery. They always offer a local beer selection, including a beer specially made for them by Urban Chestnut called Brasserie Du Urbain.

Brasserie composts all of their food waste, both from the front of the house and in their kitchen. They are able to prevent food waste by making everything from scratch, using veggie trimmings and bones for broths, and offering half-sized portions for some of their dishes, like their mussels. Any extras at the end of the night, like their homemade cheese puffs, go to the staff so nothing is wasted at Brasserie.

Kaldi’s coffee is served at Brasserie providing delicious, direct-trade coffee to their customers. They never give out plastic cutlery to their to-go customers, keeping non-recyclable, single-use items out of the landfill, and their to-go packages are made from post-consumer material, helping to support the recycling industry. The décor of Brasserie is decked out in vintage antiques, reducing the amount of virgin materials used to decorate their restaurant.

They have helped to reduce their carbon footprint through all-LED lighting, including an LED light in their exit sign (which only costs $4 a year to run annually). They keep their equipment running efficiently through a regular maintenance schedule, which prolongs the life of their coolers, walk-ins, and ovens while lowering their energy bills.

Brasserie contributes to social sustainability of the region through donating to the charities that are important to them, like NARAL,  No Kid Hungry, Stray Rescue, and Operation Food Search. They also contribute to Doorways, which provides housing and services to help those living with HIV/AIDS. Good Fortune is a they also participate in GiftAMeal, a program that markets restaurants while feeding the hungry in St. Louis. On the GiftAMeal app, each time someone takes a photo at a partner restaurant, a meal is provided to someone in need through Operation Food Search.

Brasserie takes pride in accommodating customers, including those who do not eat meat, dairy, or are gluten-free – they make sure to provide a special dining experience for all of their guests, no matter what their preferences are.
