Green Dining Alliance Program Coordinator, Olivia Engel, recently sat down with writer and editor Don Corrigan to share her enthusiasm for the growing interest from local restaurants to “green” up the way they operate.

“Here’s the thing: Your dollar is your vote,” emphasized Engel in the interview. “Where you put your dollars will influence the future. It’s empowering to make informed choices about what you purchase to eat. We really are what we eat.”

Corrigan also interviewed Tom Flood, Schlafly’s sustainability advocate at both the Bottleworks and the Tap Room, as well as Rachelle L’Ecuyer, Director of Community Development for the City of Maplewood and champion for Maplewood’s Green Dining District.

The article outlined many of the components of the GDA certification and highlighted the Green Dining District in Maplewood. To see the full story click here.

A longer version was also printed in the South County Times, as Lindbergh is Engel’s alma mater.
