Rooster, located in the heart of South Grand’s Green Dining District, serves crepes and French foods made from local, fresh ingredients in a revitalized historic building.
Rooster houses the commissary that provides food for all of the Bailey’s restaurants, saving on packaging waste and transportation emissions. Breads for all of their restaurants are made from scratch onsite. Since all of their restaurants are within the city limits, they can minimize trips and reduce the carbon footprint associated with multiple vendor deliveries. All of their lights are lit by LED bulbs and their kitchen equipment is Energy Star certified, dramatically reducing their emissions and carbon footprint – this is important, because restaurants use up to two and a half times more electricity than other commercial buildings, and buildings account for up to 75% of emissions in the St. Louis region.
Impressively, the red meat, chicken, and eggs at the Bailey’s restaurants come from local or regional pasture-raised animals, reducing the environmental impact that comes from factory farms while supporting the local economy. They serve coffee from local roasters, Goshen, and tea from Big Heart Tea Co.
Rooster on South Grand has recently decided to go straw-free, serving straws on request only. This is part of their company-wide effort to reduce single-use plastics, which includes promoting reusable cups for employees to use at work, serving to-go cutlery on request only, and using recycled paper to-go boxes for their guests.
