Panorama offers a sustainable and enchanting dining experience inside the Saint Louis Art Museum in Forest Park. The 2500 sq.ft. modern restaurant has minimalistic vibes and floor-to-ceiling windows offering sweeping views of Art Hill. The menu is American cuisine with most of the fruits and veggies sourced from Ole Tyme Produce, the largest woman-owned distributor in MO, and Fox River whenever possible. Cheeses are sourced locally from Marcoot Jersey Creamery,  bread from Companion, and ice cream from Serendipity. Local craft beers Schlafly, 4 Hands, and UCBC are available along with fresh brewed coffee from Kaldi’s. Panorama is LEED Gold certified and is a world class dining experience in a world class art museum.

Panorama controls light flow into the restaurant by operating manual window shades to adapt to exterior conditions allowing in plenty of natural light. The building has a white roof which helps regulate internal temperatures inside and smart thermostats throughout to program temperature settings. The exterior utilizes rain gardens, bioswales, and bio-retention basins to manage water runoff. SLAM took advantage of the Ameren Bizsavers rebate program to install 5 EV charging stations in the parking garage.

The head chef is a veteran member of the Saint Louis Chefs de Cuisine, American Culinary Federation and helps Panorama combat food waste by training his staff to use a food waste log to prevent future issues. Any unutilized food resources from service or events is efficiently and safely repurposed for employee meals. The menu offers vegan and vegetarian options, a stellar brunch spread on the weekends, and all of their salmon is certified by the Marine Stewardship Council. Panorama uses all reusable materials for dine-in service and offers post-consumer take-out containers for leftovers.  

Panorama is part of the Green Team at SLAM which meets monthly, so sustainability goals are always included in strategic planning.
