Ibby’s, located on Washington University’s campus, is the sustainable alternative to the fast-casual dining lifestyle that is typically associated with student life.
Ibby’s is managed by Bon Appetit, whose sustainability efforts include an animal welfare commitment, a focus on “Imperfectly Delicious Produce,” and annual efforts to source locally for special events, like their Eat Local Challenge. During the growing season, most of Ibby’s produce comes from Double Star Farms, a local farmer’s collective. Their pasture-raised beef comes from Raincrow Ranch, they get mushrooms from Ozark Forest Mushrooms, and their bread comes from Companion Bakery. There are always delicious vegan and vegetarian items on the menu, offering low-impact dishes for students and faculty. Ibby’s even grows basil, tomatillos, peppers, rosemary, and herbs for their restaurant on their campus garden and takes produce from the Burning Kumquat, Washington University’s student-led organic garden! Ibby’s composts all of their food waste from customers and kitchen staff, reducing their environmental impact by diverting food waste from the landfill and creating useful soil, which is used in their gardens and landscaping!
Ibby’s benefits from Washington University’s campus-wide environmental efforts, including energy-efficient strategies that lower their electric bills while reducing their carbon footprint, native plants on campus that encourage biodiversity, and bike lanes and racks outside their establishment to help guests avoid unnecessary car trips.
Stop by their LEED Gold certified building, located in the heart of the Danforth Campus, and try their lunch buffet or dinner service. Don’t forget to wash your meal down with a local beer from 4 Hands or a local soda from Fitz’s!
