ELEVEN ELEVEN MISSISSIPPI serves Tuscan style Italian food, prepared with the freshest produce from their ever-expanding urban farm and greenhouse! They have rows of vertical towers for lettuce and other greens to maximize water efficiency and space, a small orchard, plus rows and rows of kale, tomatoes, and other vegetables. Head Chef Bob Colosimo has even started a few beehives – honey is occasionally included for specials on their menu.
Eleven Eleven Mississippi considers environmentally responsible choices throughout their regular menu, even offering entire separate menus with vegan options and gluten-free options. Their environmental responsibility goes beyond the food at Eleven Eleven Mississippi – they contribute to Ameren’s Pure Power program in order to ensure that renewable energy has the opportunity to take root in Saint Louis. They’ve reduced their single-use footprint by purchasing compostable straws – including cocktail straws, stirrers, and to-go cutlery – and providing a space for employees to bring and store their own reusable cups. They compost kitchen and customer scraps, and have their own compost pile in their farm, reducing their methane footprint while keeping material out of the landfill.
Eleven Eleven Mississippi works to reduce its energy consumption in traditional ways, like including awnings over their windows and dimmer switches on the lights – they also go above and beyond by putting a curtain around the front door during the winter and summer, preventing losses of warm and cool air. They participate in charity events like Dining Out for Life, Chefs in a Garden, and Tomato Explosion, giving back to the community whenever they can.
Like all of the restaurants owned by the Hamilton Group, Eleven Eleven Mississippi has incorporated sustainability into its mission, and it shows in the fine foods they create.
