BRIDGE TAP HOUSE & WINE BAR is the spot in downtown St. Louis for sustainable cocktails, small plates, and local beers in a unique and beautiful setting, with cool antique lamps, a LED-lit chandelier made from repurposed branches, and vintage couches creating a hip and fun ambiance. Bridge pays homage to owner Dave Baileys’ brother who was an avid violin player. The “bridge” of the violin which holds the strings is represented throughout the space with different architectural designs and functions. This is a special and cherished place to gather with friends, family, and loved ones and retains some of the most hospitable staff in town. You won’t find a cozier getaway than this gem.
Guests will delight in locally focused small plates and a wide range of flavors, highlighting the best of Missouri’s farms from Farmstead, Eat Here STL, and What Chef’s Want while reducing the customer food waste that comes from giant portions. All of their chicken comes from Buttonwood Farms, they make their duck sausage in house from scratch, and they use only local, pasture-raised eggs. Fruits and veggies are pickled before their shelf-life expires, extending their lifespan, reducing food waste, and creating wonderful pickle plates for guests. The space which shares a wall with Willow, Baileys’ event space, uses leftover flowers and plants from parties and weddings to freshen up the inside.
Food waste is monitored through Toast POS systems that tracks how much money has been invested in each plate and paying close attention to what’s not being eaten – portion sizes and recipes are adjusted to ensure guests are not overloaded with food and that each dish is too good to waste. In addition to locally sustainable sourced food and combating food waste, Bridge has an all electric kitchen further reducing its emissions when preparing its decadent food items.
To reduce single-use plastic waste, the Bailey’s restaurants have started serving compostable straws on request only, and they use reusable tasting spoons. Their menus are printed on post-consumer material, which helps to support the recycling industry while reducing use of virgin materials. Bridge also uses Better Life all purpose soap which is less harsh for humans and our water ways.
