Maplewood rejoiced when a husband-and-wife duo set up a nose-to-tail butcher shop in their Green Dining District. Bolyard’s offers sandwiches and broths for dine-in on their patio, limited seating inside their shop, to-go meals, and weekend breakfasts. Each animal is utilized completely, down to the bones and fats – you can purchase lard and tallow here. They roast chickens every Tuesday – what doesn’t get sold gets turned into tamales and sandwiches – a favorite with their customers. Even the sinewy-tough bits of meat are broken down into dog food. Nothing is wasted at Bolyard’s Meat & Provisions.
They make everything from scratch, pickling their own locally sourced cucumbers, ramps, and asparagus – even the ketchup is house-made! Sausages and broths are made with herbs from the family’s home garden. Chris, the head butcher and owner, loves to pick out fresh produce from the Schlafly Farmer’s Market.
Bolyard’s Meat & Provisions tries to minimize their waste, offering nearly all of their sandwiches and prepared foods in either post-consumer paper or recyclable, reusable plastic containers. Plastic cutlery, which can’t be recycled in single-stream systems, is only available on request – they offer to slice sandwiches in half to reduce the need for single-use plastic waste! Customers are even encouraged to return egg cartons so farmers can re-use them!
