Baked & Boiled is a women-owned and operated bagel shop in the heart of historic Soulard. Owner Alex Pifer fell in love with bagels in high school and began experimenting with baking her own in 2020, after struggling to find the perfect New York style water bagel in St. Louis. After finding success with Wild Olive Provisions and the Tower Grove Farmers’ market, Alex moved to a permanent location in the former location of The Sweet Divine, keeping the tradition of a corner coffeeshop and bakery on 8th Street alive.
Each hand-rolled bagel is unique – there’s no machine at Baked & Boiled that cranks out perfect bagels. Alex uses high quality, unbleached, USDA Organic flour from a mill in Illinois. Alex and her team have developed a bagel with a good crunchy crust and a nice chewy interior. After rising overnight to develop flavor, the bagels are boiled (using a system that recycles the water all day long) and then baked to perfection.
Flavors range from traditional Everything and Sesame to Jalapeno-Cheddar and the popular Rosemary-Sea Salt. Alex grows her own herbs and peppers when the weather allows. Baked & Boiled sources the rest from a variety of local farmers and markets, including Soulard Market just down street, Buttonwood Farms and Farmstead Foods. Their dairy comes from Rolling Lawns Farms. The salmon is sustainably harvested Alaskan sockeye and ASC certified. There’s even a vegan Carrot Lox bagel for those that don’t eat fish.
Baked & Boiled earns high marks in every category. There’s tons of bright natural lighting. The kitchen is all LED and electric. The staff is conscious of proper composting and recycling. They limit food waste by turning leftover bagels into chips or donating day olds to various organizations. They work with many local businesses – FarmHaus Restaurants turns leftover bagels into bread pudding. Other local collaborations include Volpi, Kuva Coffee, Sump and Fourth City BBQ.
Stop in and enjoy the cozy, bright space with white marble floors and brick walls, or sit on the sunny patio with your furry friends – don’t forget to get your Polaroid taken and added to their album of pets.
