BAILEYS’ RANGE is a burger and fries joint in downtown STL that offers pasture-raised bison, local and pasture-raised smoked chicken from Buttonwood Farms, and local, pasture-raised eggs on their menu. All of their food is bought in bulk and prepared at their commissary, reducing packaging waste and food waste. They don’t use any single-serve packets at Range – all of their condiments have been made in-house. Everything, down to their ice creams and their breads, is handmade. During the growing season, Bailey’s Range uses EarthDance Organic Farm, mushrooms from Ozark Forest Mushrooms, some produce from Harvest STL, and even lettuce from their own garden. They showcase local soda from Fitz’s and Excel, and have 100% local beer on their 30 taps!

The décor around this downtown STL burger joint is made from repurposed materials – a wall of old windows hangs from the ceiling, old metal milk jugs have been converted to lamps, and the building itself is a repurposed grocery store!

Waste reduction is important to Bailey’s Range, who uses all recyclable or compostable to-go materials, recycle hard- to-recycle items like light bulbs and electronics, and reduce food waste by asking what garnishes each customer wants on their burgers, instead of automatically giving out food like tomato slices and pickles that customers might not eat. Bailey’s Range has an advantage when it comes to reducing food waste – years of good data collection. They keep a food waste log, which they use to make predictive models for how much food should be prepared each week, dramatically reducing costs while keeping organic material out of the landfill.

Vegetarians will be delighted at all of the options available, with black bean burgers, quinoa burgers, and match burgers that can be subbed out for any burger on the menu.

Social sustainability is part of the culture of Bailey’s restaurants. For example, Bailey’s Range has raised over $93,000 to date for various charities through their Community Table program.
